Alcohol
In wine terminology, alcohol refers to ethanol, a colorless flammable liquid. Alcohol in wine is produced by the fermentation of sugars present in grapes. The main component of alcohols in wine is ethanol, which forms through the fermentation of sugars in the must, with a yield of around 51%. The alcohol content in wine ranges from 8% to 15% by volume, and its amount is expressed in % vol. or g/l (1% vol. alcohol = 8 g/l). Alcohol is essential for the flavor, aroma, and body of alcoholic beverages and plays a key role in the balance of wine’s taste. Therefore, it is quite challenging to perfect dealcoholized wine.
